Meats by Linz

Our steak program starts with Meats by Linz, whose dedication to consistency and marbling defines each cut of beef and American Wagyu that graces our grill. Their attention to detail allows us to serve perfectly aged filets, ribeyes, and Wagyu selections that melt with flavor. Beside them, Superior Lamb delivers a Colorado staple—clean, balanced lamb with the mountain freshness our chefs build upon with rosemary, citrus, and seasonal vegetables.

Dry-aged beef program

Meats by Linz's dry-aged beef program builds on decades of butchering and aging expertise — refining a craft passed through four generations of the Linz family. Their facility uses what is described as the largest dry-age room in the United States: a climate-controlled room with precise temperature, humidity and airflow management — complete with circulating fans and UV sanitation to maintain both safety and quality.

80 Acres Farm, Kalera Greens

Our greens come from the cutting edge of sustainable farming. 80 Acres Farm and Kalera Greens deliver crisp lettuces and living microgreens, harvested at their peak to keep every salad and garnish vibrant and fresh. These ingredients add not just color, but energy and vitality to every plate—produce that still feels alive when it reaches your fork.

Aspen Baking Company

Bread service at Noble tells its own story. Aspen Baking Company crafts the rustic loaves that open every meal, while Dry Storage provides heirloom Colorado flour for our pastas and pastries—a nod to the fields that keep local grain culture alive. Each bite, from the crisp crust of sourdough to the silk of housemade pasta, speaks to that commitment to Colorado-grown quality.

Polidori Sausage, a Denver legend since 1925, adds bold, nostalgic flavor to our steakhouse hash and tavern boards. Red Bird Farms provides naturally raised chicken known for its tenderness and clean flavor, ideal for our brick-pressed and schnitzel preparations. Our sauces and accents reflect that same care: Madhava Foods sweetens glazes and vinaigrettes with pure agave, while Elevation Ketchup gives our burger program a handcrafted touch that complements rather than overwhelms. The secret behind every perfect rub, crust, and seasoning blend? The Spice Guys, who custom-curate our spice profiles down to the last grain of salt.
